DARARA (Cassava starch grilled tortillas)

1 pint cassava starch

½ green coconut

½ tsp salt

Grate the green coconut

Mix in the darara starch and salt.

Flatten into small circles on waxed paper

Bake on a hot, greased comal until brown.

Serve with roasted fish (SUTI)

It is a delicious side used for Garifuna breakfast dishes.

YAMEGEYGE (Baked Cassava starch and medium coconut)

3 cups cassava starch

Medium stage soft coconut (grated)

Grate the coconut

Mix cassava starch and coconut and knead into a dough

Shape dough into medium sized balls and flatten into tortilla.

Bake on a hot comal or a hot pancake griddle.
